Hi, I'm Verity.  Hubby and I retired from world traveling and bought our house in 2012 intending to fix it up.  There wasn't anything major wrong with it, it needed new floors, some wallboard work, and lots of cleaning and painting.  The kitchen is also in pretty rough shape and could use a remodel.  We got as far as removing the old floors and installing most of a tile floor (by ourselves, it was pretty fun!) before hubby's health started failing rapidly.

He was diagnosed with fibromyalgia (muscle pain), neuropathy (nerve pain), and several other things.  I had spent the previous 6 years struggling with my own health, trying to convince doctors that no, I really wasn't just fat and lazy, and FINALLY getting a diagnosis of hypothyroid (I don't make enough thyroid hormone, so I have no energy) and starting treatment for it.  I still have a lot of health problems from the years of it was undiagnosed and untreated, and the bad eating that accompanied having no energy to cook.

Since then I have slowly (oh, so slowly.  grr...) been feeling better and more energetic, so I have been working on relearning how to cook, taking care of hubby, and working on the house with my 'spare time and energy' (ha ha).

In February 2015, I experimented with taking hubby off gluten to see if it would help his symptoms at all, and it had dramatic effects, so I have spent the last year frantically learning how to run a healthy gluten free house.  In July 2015 we did the Elimination Diet by Alissa Segersten and Tom Malterre and it also had dramatic effects.  We were able to stay on it for a month before exhaustion forced us to quit, but the results were very remarkable.  Hubby experienced some profound deep healing with many of his symptoms and I had many improvements also.  I am planning on returning to the diet in January to continue the healing I experienced on it.

I'll be posting recipes I've successfully made relating to whole grain gluten free cooking and baking, Elimination Diet, converted recipes, techniques, and whatever else comes to mind.  Grab a cup of tea and come join me in my half painted kitchen.  Let the experiments begin!
